Processing:
César's workers first pick ideally ripe coffee cherries and then spread them in thin layers on drying beds. Drying takes approximately 10 days. The workers periodically rake the cherries to ensure even drying. When a certain moisture content is reached, the dried cherries are peeled and exported to our roasting plant.
What they are good for:
Espresso, milk drinks and filter
Barista Recommendation:
Set the pressure on the machine to 6 bar and the temperature to 93°C. Grind 18g of coffee and extract 42g of the resulting espresso in 30 seconds. Adjust the output according to preference.
At all times, use filtered or bottled water with an alkalinity range of 60-80 ppm.
Good to know:
Always use beans no earlier than 10 days from the roasting date to make espresso. After the 1st opening, allow the package to air out for at least 24 hours before brewing. This will prevent unwanted bitter notes in the taste.
