How it tastes:
Like pink fruit, rose, mango, papaya and cocoa.
Processing:
First, ideally ripe coffee cherries are picked and then dried for about 10 days. The coffee cherry grows at a relatively high altitude, so in order to preserve all its qualities, the drying process takes more time. After drying, the café is peeled, the parchment is also peeled and the processing is completed. The coffee then looks forward to its journey to the roastery.

Barista Recommendation:
Set the pressure of the machine to 6 bar and the temperature to 93°C. Grind 18g of coffee and extract 42g of the resulting espresso in 30 seconds. Adjust the output according to preference.
At all times, use filtered or bottled water with an alkalinity range of 60-80 ppm.
Good to know:
For filter coffee, always use beans no earlier than 7 days from the roasting date. After the 1st opening, allow the package to air out for at least 4 hours before brewing. This will prevent unwanted bitter notes in the taste.
