How it tastes:

Processing:
Gildo and his team first carefully sort the coffee cherries, selecting only those with the highest level of ripeness. They then strip them of their skins and leave them to ferment spontaneously in a tank for 24 hours. They then wash the coffee thoroughly with clean water and dry it.
What it's good for:
Espresso, milk drinks and filter
Barista Recommendation:
Set the pressure of the machine to 6 bar and the temperature to 93°C. Grind 18 g of coffee and extract 42 g of the resulting espresso in 30 seconds. Adjust the output according to preference.
At all times, use filtered or bottled water with an alkalinity range of 60-80 ppm.
Good to know:
Always use beans no earlier than 10 days from the roasting date to make espresso. After the 1st opening, allow the package to air out for at least 24 hours before brewing. This will prevent unwanted bitter notes in the taste.
