Processing:
Sakicha plant workers first load the ideally ripe cherries into plastic barrels, which they seal hermetically and immerse in cold water for 72 hours. Due to the low temperature, anaerobic fermentation takes place very slowly, resulting in a clean flavour profile. The cherries are then dried on African beds for approximately 14 days.

Espresso, milk drinks and filter
Barista Recommendation:
Set the pressure on the machine to 6 bar and the temperature to 93°C. Grind 18g of coffee and extract 46g of the resulting espresso in 30 seconds. Adjust the output according to preference.
At all times, use filtered or bottled water with an alkalinity range of 60-80 ppm.
Good to know:
Always use beans no earlier than 10 days from the roasting date to make espresso. After the 1st opening, allow the package to air out for at least 24 hours before brewing. This will prevent unwanted bitter notes in the taste.
