Processing:

Kenya Kiangoi AA is processed in a washed process that involves the careful hand-picking of ripe coffee cherries. After picking, the cherries are de-skinned and pulped using a pulper and then fermented in water tanks for 24 hours, which helps break down the remaining pulp. The grains are then washed with clean water and sorted by density to select only the best quality grains. Drying takes place on African beds for 14 days, during which time the beans are turned regularly to ensure even drying and optimum moisture content. Finally, the grains are sorted according to size and quality. This lot is labelled 'AA', representing the largest and highest quality grains.

What it's good for:

Empty the contents of the bag into a cup and pour 160g of warm or cold water over it. Stir well. For milk drinkers, pour in instant milk. Anywhere, anytime.

Barista recommendations:

Ideally, use filtered or bottled water with an alkalinity of 60-80 ppm.
